I have yet to make a flop of this! I just can't even if i tried! Tell you what: they'll always come back for more!
Ingredients
12 heaped tablespoons cake flour
6 large eggs
125ml sunflower oil
a pinch of salt
water (lukewarm)
2 tablespoons of brandy Secret ingredient!
Method
Make a paste of the flour, eggs and a little bit of lukewarm water. Add the brandy and oil once it has reached a smooth consistency.
Add lukewarm water to thin the mixture. Be careful not to add too much water. It should be like milk, not runny water. THe pancake will break if too much water has been added.
Let the mixture rest for a while. Tip: until the mixture is slightly dry at the top.
Heat a non-stick pan with a tablespoon of sunflower oil. Don't let the pan get too hot.
Add one ladle of the mixture to the pan and let the mixture cover the surface of the pan.
Turn the pancake to fry both sides.
Sprinkle with honey or with cinnamon and sugar or you can fill it with pre-cooked chicken or pre-cooked mince or any garnish you desire!
The secret of a greater than great pancake is that is must be crispy on the sides!
