Alan's Pan Fried Tuna and Rice

Ingredients

1 medium sized chopped onion

1.5 cups of rice - or Basmati

1 or 2 tins of shredded tuna

3 table spoons butter

Freshly chopped parsley or coriander - about a cup

Lemon or lime - to taste

Salt and pepper - to taste

Optional: 1 teaspoon dried fish spice

Optional: 1 cup chopped mushrooms

Optional: 1/4 cup pine nuts

Optional: 1 chopped small spring onion


Method

Fry the rice (i prefer Basmati) in three tablespoons of butter

Add the onion until fried a light brown colour

Add the chopped mushroom

Add 4 cups of boiling water

Add fish spice (to taste)

Add some of the lemon (or lime), i usually add the juice of half a lemon

Add salt and pepper (to taste)

Let it boil SLOWLY until the rice is soft and dry

Add 1-2 tins of shredded tuna

Add the pine nuts

Add freshly chopped parsley or coriander when serving

Add the chopped spring onion
